Lunchbox ideas

Are you stuck for lunchbox inspiration? This term I am going to share some creative ways to get your children interested in eating vegetables. As a parent of two primary school-aged children, this is one of my daily challenges. According to Australian Dietary Guidelines, primary school-aged children should be consuming 5 serves of vegetables each day. However, ABS data suggests that less than one per cent of Australian children are eating the recommended amount each day. We all have a way to go, so let’s kick off 2018 with a renewed focus on our children’s health.

My kids love pancakes, so they are a sure way to get them eating some extra vegetables. This recipe contains potato and zucchini, but you could add carrot, corn, pumpkin or any of your favourite vegetables. Pancakes are so versatile, they can be eaten any time of the day! 650g potatoes
400g zucchini
½ onion, chopped finely
¼ cup leek, chopped
1 egg, lightly beaten
1 cup wholemeal plain flour
Olive oil, for frying

Grate the potatoes and zucchini, then add in finely chopped onion and leek. Mix well. Add the egg and stir well. Fold the flour into the mixture and season with pepper. Heat a fry pan on moderate heat and add a little olive oil. Spoon 2 tablespoons of the mixture into the fry pan. Flatten with the back of a spoon and cook on either side until golden brown.
